Tequila is a distilled whose origin ids the city of the same name on the state of Jalisco, Mexico; there are many varieties of Tequila and it can be found on both “white” and “amber” colors.
Just like the Mexican Mezcal, it is made through the fermentation and distillation of the Agave Nectar, particularly out f the Blue Agave, there are also other states where tequila is made like Guanajuato, Nayarit and Michoacan) but only in a few cities, unlike the state of Jalisco where tequila can be made on any city of that state.
This distillation of the Agave Plant is, perhaps, the most worldwide known Mexican beverage. In order to be called Tequila, it has to be made in Mexico and contain a minimum of 51% of sugars made from the Agave nectar, although the best tequilas are 100% Agave Nectar.
The best producers of Pure Tequila include the Legend “100% de Agave” as regulated on the Mexican Official Normativity and The Tequila Regulation council.
There are four main kinds of Tequila and they are categorized as follows:
-Tequila Blanco (White): Is the one obtained right after distillation. Goes straight to bottling and it only spends some hours or maybe days on the oak barrels.
-Tequila Joven (young): Is the result of Platinum Tequila with Rested Tequila and/or Old or Extra/Old Tequila.
-Tequila Reposado (Rested): Is the one that stays for a minimum of two months and up to a year in White Oak barrels. It is smoother than white tequila, and has a golden color and a bit of wood built into its flavor.
-Tequila Anejo (Old): It is the one that rests on White Oak Barrels for at least One year and up to ten years. Its flavor is strongly impregnated with the wood and its color is dark amber. It is also the most repined and sophisticated Tequila.
