Holy Mole!
So you think you know Mexican food, huh? Well get yourself down to Actopan, Ejido de Mexico for the Feria Nacional del Mole (National Mole Fair) and try some of the real deal! Mole's main ingredient is chile, but it also has unsweetened chocolate, garlic, cloves, peanuts, tomatoes, and onions. Cinnamon, coriander, and raisins aren't uncommon ingredients in traditional mole, either. The mole is served over chicken or beef usually. There are actually a ton of different types of moles: green, red, white, brown, yellow â€" all with different ingredients. The basic mole recipe comes from pre-Colombian times, and was eaten by the Aztecs and Mayans back when they ruled this world. The recipes have changed, but one thing remains â€" mole is one of the most authentic indigenous dishes you can make. The Feria Nacional del Mole (National Mole Fair) is in the city of San Pedro Actopan, just south of Mexico City, from October 1st-21st every year. There are literally thousands of different moles to try and buy! There is dried mole mix, there is mole past (both of which you just add water) and there is already prepared, jarred mole for your cooking pleasure. If you have not ever tried mole, you most definitely should. You never know which one you might like! The first time I tried the traditional mole, it wasn't that great â€" the second time I tried it, I fell in love. Now I can't get enough! I am still trying to perfect my recipe â€" I ought to go down to the Feria Nacional del Mole (National Mole Fair) this year!
