Mexican cooking involves more than chiles, tomatoes, beans, and tortillas. There is a certain style and flair that come with it. The most common methods of Mexican cooking include frying, steaming, and cooking on the skillet. Most dishes can be made purely on the stove top. It wasn’t until Americans got a hold of the cuisine that everything started to be put in the oven. Because of the lack of ovens, the first Mexican cooking method was heating everything over an open fire. Early Mexicans would use ceramic dishes as well as cast iron skillets and pots. It was sort of the precursor to what we consider grilling today!
The Mexican methods of cooking makes for a nutrient rich diet, as most salsas are not cooked, preserving the vitamins and minerals contained in the vegetables used to make it. Tortillas for example, are made from masa, which is just water and corn meal, shaped into a ball and pressed flat by a tortilla press. You then heat it in a dry pan on both sides, and you have a healthy bread alternative that is full of all the original nutrients that corn has in it. Steaming is also a popular method for fish, seafood, and vegetables in the coastal regions. With the absence of oil and butter, the dish is automatically more healthy and better for you.
