About Enchiladas
The thing about enchiladas is that we’ve (and I mean Americans in general) taken them and staked them in baking dishes, we’ve used crumbled tortilla chips in layered pies like lasagna and called it enchiladas. Yes our great American casseroles might turn out to be a smash hit, but we’ve lost the essence of the true authentic enchilada recipe. Hold on to your arteries while I tell you a little bit about authentic enchiladas.
To make real enchiladas, you must first fry the tortillas (corn – NEVER flour) in grease. By grease, I mean lard. You make your own salsa using fresh chiles and tomatoes, garlic, onion, and oregano. Never canned, jarred, or dried. All ingredients muse always fresh. Next you need to use Manchego, Asadero, or Chihuahua cheese. You fill the tortillas with shredded chicken or beef (never ground) or just cheese and onion roll them up, and put them directly on the plate. In some regions, they make enchiladas with refried beans or potatoes – yum. You then put your homemade salsa over the enchiladas and top with queso fresco, which is like feta, lettuce, and diced tomatoes. Different, I know, but that is how enchiladas are really made, and I’ve never had a bad plate of enchiladas in my five years living in this great country!
