Mango Salsa
Salsa is the basic of basics you need to know when starting your journey in Mexican cooking. Salsa is such a broad term to use, because there are so many different kinds. Salsas can be chunky, fresh, and chilled or equally hot with temperature and spice to be poured over foods. There are thousands of recipes for salsa. We have many salsa recipes right here on Mex Adventure for you to browse through and pick from! There are tomato based salsas, chile based salsas, and fruit based salsas, which are my favorite. I love mango salsa the most. To achieve the best salsa, it needs to be homemade. There’s just no comparison to that jarred stuff!
To make mango salsa, you need to start with fresh mangos, peel and seed two of them and dice them into one inch cubes. Put these in a bowl with minced garlic and onion, diced green bell pepper, a Serrano chile (seeds and all) and a diced up tomato or two. Add a healthy squeeze of lime juice and the juice of half an orange, about a half a teaspoon of salt, and a healthy dose of freshly ground black pepper. Add in an eighth a cup of olive oil, and mix all of this together. Cover and chill for about an hour to allow the flavors to meld. It’s really easy once you get all your veggies chopped. This is a great salsa for chips, but it’s absolutely delicious on chicken breasts and pork chops! You can throw it in a saucepan and let the mangoes cook down a little bit before putting it on meats – it delectable and super simple!
