Burrito Recipe
Breakfast Burritos
Mexican food is so wonderful because you can swap ingredients, fillings, and coverings and make totally different meals every night of the week! If you are running short on time, burritos can save the day. Or night! I’m going to give you a great burrito recipe here, but feel free to swap the chicken for beef or shrimp. You can make breakfast by scrambling up some eggs!
- 1 small onion, chopped
- 2 small cloves garlic, peeled and minced
- 2 tsp vegetable oil
- 12 oz boneless, skinless chicken breasts, cut into 2-inch strips
- 1 can (12 oz) black beans, rinsed and drained
- 1 1/2cups hot salsa
- 1/2 tsp chili powder
- 6 flour tortillas (8 inches each)
- 3/4 cup cheddar, shredded
In a large skillet, sauté onion and garlic in oil over medium-high heat until onion is translucent. Add chicken; cook 4 minutes or until no longer pink. Stir in beans, 1/2 cup salsa, and chili powder; cook 2 minutes longer. Place tortillas between moist paper towels and microwave on high 10 seconds. Spoon 1/2 cup filling onto each tortilla; top with 1 tbsp cheddar. Fold each into a burrito, and you’re done!
Serve these with any salsa, sour cream, or guacamole. You can easily make breakfast burritos like I said, by adding scrambled eggs, and hash browns instead of the chicken and beans, but keep everything else the same. You can enjoy these burritos for breakfast, lunch, or dinner. You could even pour a sauce over the top, sprinkle on some cheese and bake for 10 minutes for real southwest burritos so good, you’d think you were in San Antonio!
