Mexican Cornbread
Corn bread has long been a staple in the southern USA, thanks to our neighbors south of the border. Mexican cornbread is a delicious, quick and simple recipe you can make and have for breakfast, lunch, or dinner! All you need is: a pound of ground beef, about a cup of onions, 2 cups of cheese, some store bought or homemade salsa, some Serrano or jalapeno chiles , a can of creamed corn, and a small can of corn kernels.
Make this Mexican corn bread recipe by fixing the cornbread according to package directions (don’t bake it yet) stirring in your cooked ground beef, onions, creamed corn, drained corn kernels, some cheese, the chiles, onions. Stir all this together to make a batter. You might add some olive oil and parmesan cheese, as well. It makes it have a good flavor, and the oil helps keep it moist. Pour the batter in a greased square baking dish and top with the rest of your cheese. Bake it for 20 minutes longer than what the package says, and keep an eye on it. I’d recommend baking it in the middle rack, then 10 minutes before it’s done, move it to the top so the cheese gets good and brown and bubbly!
