Enchilada Casserole
Enchiladas are usually what come to mind when one thinks of Mexican food. The traditional ones require a little skill in filling with just the right amount of mixture, rolling, and then placing carefully in a dish. Making an enchilada casserole is so much easier and less time consuming. Taco or enchilada casseroles make the perfect 45 minute meal for mid-week dinners. Below is a quick and basic recipe using ingredients you probably already have for great enchiladas without the hassle.
- 1 pound ground beef
- 1 can cream of mushroom soup
- 1 can tomato soup
- 1 can cream of chicken soup
- 1 small can diced green chiles
- 1 small can (15 ounce) hot enchilada sauce
- 1 pound longhorn cheese, grated
- 1 dozen corn tortillas
Preheat the oven to 350 degrees. Cook the beef in large skillet until meat is done then drain it. Add each can of soup, the chiles, and the hot sauce. Heat this mixture until it boils and allow it to then simmer 5 minutes and then remove from the heat. Put four corn tortillas on the bottom of your backing dish and add layer a third of the meat mixture then a third of the grated cheese. Continue making layers until all ingredients are used. Just bake it in the oven for 20 minutes, and you will have a great dinner that everyone will enjoy. Serve these enchiladas with cold Mexican beer or Jamaica water to make it feel like you are in Mexico!
