Beef Enchilada Recipe

Ground Beef Enchiladas

Beef enchiladas should be in everyone’s recipe box. Here we highlight an awesome beef enchilada recipe you’ll want to hang on to. You can use shredded beef OR make ground beef enchiladas by swapping the shredded beef for 98% lean ground.

  • 1 pound of cooked shredded beef
  • 1/2 cup of chopped onion
  • 2 garlic cloves, crushed
  • Salt and pepper
  • 20 ounces of enchilada sauce (green, red, or white – you choose!)
  • 8 corn tortillas
  • 3/4 cup shredded pepper-jack cheese (you can use whatever cheese you have on hand)
  • 1 Tbsp. chopped fresh cilantro
  • sour cream (optional)

Preheat oven to 350°F.
Stir the beef and a half of the enchilada sauce and in a bowl.

Pour the other half of the sauce into a shallow dish. Dip tortillas, one at a time, into sauce to coat both sides. Put one teaspoon of beef mixture down the center of each tortilla and then roll it up. Place the filled tortillas seam-side down in a baking dish.

Cover the dish with foil and bake for 15 minutes in the oven.

Remove the foil and spoon the rest of the enchilada sauce over enchiladas and sprinkle with the cheese. Continue baking uncovered for 10 minutes or until cheese is melted. Serve with sour cream if you want to add a creamy kick to these beef enchiladas! These are best with a cold Mexican beer, rice and beans.
