Cheese Enchilada Recipe
Cheese enchiladas are a great vegetarian alternative. You easily make them vegan by swapping the proper products. This basic cheese enchilada recipe will give you the basic idea to run with. You can modify this recipe and make it your own!
2 medium sized chopped onions
1 teaspoon of oregano
Salt & pepper
Enchilada sauce of any kind! It could be green, red or white
12 corn tortillas
8 cups of cheddar cheese (you can use whatever cheese you have on hand)
Sautee the onions in oil for about 5 mintues, or until clear, add the oregano and salt and pepper to taste.
In a bowl, put some of your enchilada sauce and dip your tortillas in it so both sides are coated. Add a pinch of cheese and spoonful of onion mixture to center then fold and lay seam side down in a baking dish. Repeat this with all the tortillas until you have a dish full of yummy cheese enchiladas. Pour the rest of the sauce over the enchiladas and sprinkle the remaining cheese on top. Bake at 350 F for twenty minutes, and you’re done! You are on your way to delicious cheese enchiladas. You can serve these with a salad made of cucumber, avocado, and tomato with a cilantro cream dressing. You should definitely serve these with ice and beans. Black beans are a great choice because they add a lot flavor! Mexican candies or sorbet should finish off the meal.
