Easy Chicken Enchiladas
Many Mexican dishes are made from chicken, and chicken enchiladas are a staple in Mexican cuisine. These are probably the most commonly known food of all of the Mexican dishes. Chicken enchiladas come in many varieties: green, red, or my personal favorite, chicken enchiladas with sour cream sauce. Chicken enchiladas are easy to prepare and even easier to enjoy! Check out this super simple chicken enchiladas recipe and feel free to customize it to your liking!
- 4 chicken breasts
- 1 chopped onion
- 1/2 pint sour cream
- 1 c shredded Cheddar cheese
- 1 tablespoon dried parsley
- 1/2 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/2 tsp salt (optional)
- 1 (15 oz) can tomato sauce
- 1/2 c water
- 1 tbs chili powder
- 1/3 c chopped green bell pepper
- 1 minced clove garlic
- 8 (10 in) flour tortillas
- 1 (12 oz) jar taco sauce
- 3/4 c shredded cheese (preferably cheddar)
Preheat oven to 350 degrees.
In a medium pan on medium heat, cook the chicken until it’s done. Cut it in cubes and put it back in the pan. Add the onion, sour cream, Cheddar cheese, parsley, oregano, and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
Roll even amounts of the mixture in the tortillas. Arrange in a baking dish. Pour the taco sauce over it and top with 3/4 cup Cheddar cheese. Bake it uncovered in the oven 20 minutes.
