Enchilada Recipe

Enchilada sauces vary from region to region in Mexico. There is also the Tex Mex version of enchilada sauce. We will highlight some of the most popular enchilada sauces here in this article, and we encourage you to take these and make them your own by adding more garlic, more tomato, or more spice! Heat up your kitchen tonight with one of these great sauces, or find an enchilada recipe right here on Mex Adventure and pour this sauce over the top!

For all the enchilada sauces, you will need onion, garlic, chicken broth, salt and pepper. To make a great green sauce, roast up 6 or 8 tomatillos in a hot oven until the skins blister. Carefully remove and place in ziplock bags for about ten minutes, then coarsely chop and put them in the blender, adding in your salt, pepper, garlic, onion. Thin out the sauce by eyeballing the amount of chicken broth needed. For a delicious red sauce, you can either use tomatoes or red chilies. If you’re using tomatoes, you can roast them like the tomatillos, or just liquefy pan fried tomatoes. Be sure to add in chili powder and cayenne pepper for a little heat. If you want to make a white sauce, you can use sour cream, cream cheese, or a combo of both. Sautee the onion and garlic in a sauce pan, then add in the sour cream and cream cheese. Thin it with the chicken broth, and add your salt and pepper. If you can find manchego cheese, by all means, use it in your sauce – it’s the secret ingredient to a fabulous cream sauce!
