Easy Mexican Casseroles
Mexican casseroles might just become your favorite meal to prepare. Here we will cover the basics of easy Mexican casseroles. Keep in mind that these are basic ingredients and steps, amounts vary depending on how many you are feeding!
For this recipe, you will need:
- Ground or shredded beef or chicken (cooked)
- Salsa (store bought or homemade)
- Olives
- Whole cooked beans (canned or homemade)
- Cheese
- Tortilla chips
This is how easy this is:
Just layer the tortilla chips, then cheese, then the meat, beans, salsa, olives, a little more cheese, then the tortilla chips again in a casserole dish until it is full. Make sure the last layer is cheese. Bake it for about a half hour, then remove and let it cool for ten to fifteen minutes. Cut it like a pie and top with shredded lettuce, diced tomatoes, sour cream and guacamole, or more salsa and enjoy! You can serve a salad with avocado, cucumber, and green bell pepper alongside with a cilantro cream dressing in the warmer months. A delicious dessert would be lime sherbet or Mexican candies. In the cooler months, you might serve a vegetable soup on the side with a cup of Mexican coffee (with chocolate and cinnamon) or a Mexican baked dessert.
