Mexican Ground Beef Casseroles

Ground beef casseroles are super simple and require little or no prep. Just follow the simple steps listed below and you will have a meal that everyone will enjoy! Put a Mexican twist on your beef casserole and serve margaritas and chips and salsa at the table – your guests will feel like they are south of the border!

  • 2 pounds lean ground beef
  • 1 large onion, chopped
  • 1/4 cup chili powder
  • 1 jalapeño chili, chopped
  • 12 5- to 6-inch-diameter corn tortillas
  • 1 15-ounce can chili beans
  • 1 1/2 cups (packed) grated sharp cheddar cheese
  • 2 14 1/2-ounce cans Mexican-style stewed tomatoes

Preheat the oven to 350°F. Grease a square glass baking dish. Sautee the beef and onion in heavy large Dutch oven over high heat until brown, about 10 minutes. Reduce heat to low. Mix in the chili powder and jalapeсo and sautй 5 minutes. Season the mixture with salt and pepper.

To assemble your Mexican beef casserole, overlap 6 tortillas on bottom of prepared dish, covering completely. Spoon beef mixture, then beans evenly over tortillas. Cover with remaining 6 tortillas. Sprinkle cheese over. Pour tomatoes with their juices over cheese. Bake the casserole about an hour until it’s heated through and bubbling at edges. This ground beef casserole can be served with a salad on the side, or a corn and black bean mixture to add a nice texture to the palette. A great wine pairing would be a nice medium bodied Mexican wine from the Calafia region, as well.
