Mexican Rice Recipe
Basic Mexican Rice
Mexican rice goes with every Mexican dish there is. You need to have a great recipe for it, and I’m going to give you basic one here. If you want a more intricate Mexican rice recipe, search this site – I will be adding more in the weeks to come!
Basic Mexican rice is rice with tomato or other veggie flavoring. I like to take 3 cups of cooked rice, put it in a pot, and stir in a (drained) can of mixed veggies and a small can of tomato sauce. Season the rice to taste with salt and pepper. Another Mexican rice recipe I use a lot follows the same principle, but add some butter, garlic, and corn to the mixture. I always roast my corn before adding it, because it’s just so much more flavorful that way. You can also dice up carrots and sautй them. Add them with a small can of tomato sauce, and presto! You have super fast, super easy Mexican rice that can go with every Mexican dish you make!
As always, you can substitute brown rice for white, olive oil for the butter, and it’s always better to use fresh veggies in place of canned – you can really tell the difference!
