Chicken Quesadillas
Quesadillas were the afternoon snack of choice for my mom. They’re so easy to do and take so little time, it’s no wonder I had quesadillas 4 of 5 days of the week for my afternoon snack! Quesadillas are basically tortillas with melted cheese. Can’t get much more complicated than that, right? Well, by adding different ingredients and fillings, you can turn that boring cheese quesadilla into a meal!
To make a basic microwaved quesadilla, just put a flour tortilla down on plate, cover with cheese and one more tortilla, and microwave on high for about 30 seconds, and you’re ready to eat. Swap that flour tortilla for a whole wheat one. Or corn – and see what a difference it makes – super tasty! Another thing in a league of its own is cooking it in the pan. Flour quesadillas can be added directly to the pan, but for corn, you’ll need to add some oil to fry them a little bit.
Here’s a quick chicken cheese quesadilla recipe: heat a skillet over medium high heat. Have all these ingredients at the ready: shredded chicken, cheese, cooked onion and put one flour tortilla in the pan. Flip it after 15 seconds or so and top with cheese, then chicken and onion. Put a little more cheese, and another tortilla. Wait 20 seconds and flip the whole thing over and cook another 30 seconds or so. Your chicken cheese quesadilla is ready to be enjoyed!
