Seven Layer Taco Casserole
Taco Enchilada Casserole
Tacos are a great weeknight standby to fix. Sometimes I get tired of tacos all the time. You have to chop all the veggies, and then put everything together – they are quick, but if you’re running short on time (and patience) why don’t you try a layered taco casserole? The most famous of my recipes is a seven layer taco casserole, and I will share it with you right here!
All you need is:
One can refried beans a pound of cooked meat – chicken or beef (shredded or ground) a large chopped onion, 3 minced garlic cloves, 3 finely diced tomatoes, about 2 teaspoons of cumin and one teaspoon of oregano, store bought salsa, 1/2 bunch of finely chopped cilantro, 2 mashed ripe avocados, 1/2 large lemon, 1 teaspoon garlic powder, Salt & Pepper, 3 cups tortilla strips or broken up taco shells, 1 cup shredded Mexican cheese and some sour cream.
You need to make the guacamole first by placing the mashed avocados in a bowl. Squeeze the lemon in there and mix in the remaining tomato, garlic powder, half the cilantro and half the onions. Mix well. Season with salt and pepper. I know it seems like a lot of ingredients, but we’re just going to layer everything starting with the beans, then the meat, oregano, tomatoes, onion, garlic, salsa, and cilantro, then top with the chips then the cheese. Bake it for 20 minutes. Serve by topping with guacamole and sour cream for a great sever layer taco casserole in no time at all!
